Quick and delicious.
Ingredients
BACON AND BASIL PESTO PASTA
- 350g spiral pasta
- ¼ teaspoon salt
- 1 pack streaky bacon
- ½ bunch broccolini
- 1 courgette
- ½ punnet cherry tomatoes
- 80g basil pesto
CAESAR SALAD
- 1 baby cos lettuce, roughly chopped
- ½ block shaved Parmesan cheese
- 50g Caesar dressing
Steps
-
a medium pot of water to the boil.
-
Add pasta to pot of boiling water with salt and cook for 10-12 minutes, until just tender. Drain well and return to pot with a drizzle of oil to prevent it sticking.
-
While pasta cooks, heat a drizzle of oil in a large fry-pan on high heat. Slice bacon 1cm and cook for 3-4 minutes, until golden. While bacon cooks, roughly chop broccolini into bite sized pieces and grate courgette.
-
Add broccolini to pan and cook for about 1 minute. Add cherry tomatoes and cook for 1-2 minutes, until broccolini is tender and tomatoes are warmed through.
-
Remove pan from heat and add drained pasta, courgette and basil pesto. Toss well and season to taste with salt and pepper.
-
Add all Caesar salad ingredients to a medium bowl and toss to combine. Season to taste with salt and pepper.
-
divide bacon and basil pesto pasta between bowls or plates and serve Caesar salad on the side.
