Pistachio Crusted Chicken with Greek Salad

A delicious nutty chicken with a moreish spice mix.


Ingredients

PISTACHIO CRUSTED CHICKEN

  • 300g chicken breast
  • 20g pistachio nut mix
  • 3 teaspoons chicken spice mix
  • ¼ teaspoon Dijon mustard

GREEK SALAD

  • 1 ciabatta loaf
  • ½ Lebanese cucumber
  • ½ tomato
  • ¼ red onion
  • ½ courgette
  • 3 tablespoons chopped mint leaves
  • 30g feta cheese, crumbled
  • Juice of ½ lemon

TO SERVE

  • 2 tablespoons hummus

Steps

  1. oven to 220°C. Line an oven tray with baking paper.
  2. Pat chicken dry with paper towels and cut into steaks. To do this, place your hand flat on top of chicken breast and use a knife to slice through horizontally to make two thin steaks.
  3. Finely chop pistachio nut mix, add to a small bowl with chicken spice mix and mix to combine. Heat a drizzle of oil in a medium fry-pan on high heat.
  4. Cook chicken in pan for about 30 seconds each side, until just starting to brown (but not cooked through). Place onto one half of prepared tray. Brush chicken lightly with mustard mixture, sprinkle over pistachio and press down firmly with fingers to adhere.
  5. Roughly tear, or dice ciabatta into 3 cm pieces and place on other side of tray (next to chicken). Drizzle ciabatta and chicken with a little olive oil then bake for 6-7 minutes, or until chicken is just cooked through and ciabatta is crispy. Set chicken aside to rest for a few minutes.
  6. While chicken and ciabatta cook, prepare Greek Salad. Dice tomato and cucumber 1cm; thinly slice onion; cut courgette in half lengthways then thinly slice. Place all in a medium bowl, along with mint, feta and lemon juice. Add croutons, drizzle with a little olive oil, season and toss to combine.
  7. divide pistachio crusted chicken and Greek salad between plates and dollop with a little hummus.
