Chicken and Soba Noodle Laksa Soup

A delicious midweek meal.


Ingredients

CHICKEN AND SOBA NOODLE LAKSA SOUP

  • 1 pack diced chicken thighs
  • 1 pottle ginger paste
  • 1 pack soba noodles
  • ½-1 pottle laksa paste (depending on heat preference)
  • 1 can coconut milk (shake well before opening)
  • 1 cup chicken or vegetable stock
  • ½ head broccoli, cut into small florets
  • 2 carrots
  • 1 bok choy, end trimmed 1cm and leaves rinsed
  • ½-1 tablespoon fish sauce
  • Juice of ½ lemon

TO SERVE

  • 2 tablespoons roughly chopped coriander leaves and stalks 
  • ½ lemon, cut into wedges

Steps

  1. a full kettle of water to the boil.
  2. Heat a drizzle of oil in a large pot on high heat. Pat chicken dry with paper towels and toss in a medium bowl with ginger paste. Add chicken to pot and cook chicken for about 3 minutes, until starting to brown. Turn often to ensure even cooking.
  3. While chicken cooks, pour boiling water into a medium pot and bring to the boil with the lid on. Add soba noodles and a pinch of salt and cook for about 4 minutes, until tender. Drain and return to pot with a drizzle of olive oil to prevent sticking.
  4. Add laksa paste to pot with chicken and cook, stirring, for 30-60 seconds, until fragrant. Add coconut milk and stock and bring to the boil. Reduce heat to low-medium to simmer for about 2 minutes.
  5. Add broccoli and simmer for a further 2-3 minutes, until almost tender.
  6. While laksa soup simmers, peel carrots and discard skin. Peel carrots into long, thin ribbons and thinly slice bok choy. Add carrot and bok choy stalks (white part only) to pot and simmer for about 1 minute, until tender. Remove from heat and fold through bok choy leaves, fish sauce and lemon juice.
  7. divide soba noodles between bowls and ladle over chicken laksa soup. Garnish with coriander and serve with a lemon wedge on the side.
