Teriyaki Pork Meatballs with Japanese Veggie Rice

Ingredients

JAPANESE VEGGIE RICE

  • 1 cup Japanese brown rice
  • 1¼ cups water
  • 1½ cups frozen corn
  • 2 baby bok choy
  • 1 carrot
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce

TERIYAKI PORK MEATBALLS

  • 450g teriyaki pork grind
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • ¾ cup water
  • 1 tablespoon sesame oil
  • 2 teaspoons rice wine vinegar
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon cornflour mixed with 1 tablespoon water

TO SERVE

  • 1 tablespoon sesame seeds

Steps

  1. a small pot of salted water to the boil.
  2. Combine rice, water and a pinch of salt in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.
  3. Using a tablespoon measure, scoop out teriyaki pork mince and roll into firm, golf ball-sized balls.
  4. Heat a drizzle of oil in large fry-pan on medium heat and cook meatballs for 5-7 minutes, turning often, until browned on all sides and cooked through. In a small bowl mix together all remaining meatball ingredients (except cornflour).
  5. Remove meatballs from pan and set aside on a plate. Keep pan on heat, pour in sauce and allow to bubble for about 30 seconds. Reduce heat to low, add cornflour mix and whisk for 3060 seconds, until sauce thickens slightly. Remove from heat and return meatballs to pan, turning to coat in sauce.
  6. While meatballs are cooking, cook corn in pot of boiling water for 2 minutes. Drain and set aside. Trim ends off bok choy then thinly slice. Peel and grate carrot. Fold vegetables, sesame oil and soy sauce through cooked rice.
  7. spoon Japanese veggie rice into bowls and top with teriyaki pork meatballs. Drizzle over remaining sauce and sprinkle over sesame seeds.
