Miso-Glazed Fish with Sesame Pumpkin and Broccolini

Ingredients
SESAME PUMPKIN AND BROCCOLINI
- 150g pumpkin, sliced 0.5cm
- ½ bunch broccolini, cut in half lengthways
- ½ carrot, sliced into 0.5cm-thick rounds
- Pinch of chilli flakes (optional)
- 1 pottle sesame dressing
- ½ baby bok choy, end trimmed 1cm
MISO-GLAZED FISH
- 150g fish fillets
- 1-2 tablespoons miso glaze
TO SERVE
- ½ lime, cut into wedges

oven to 220°C. Line an oven tray with baking paper.

Toss pumpkin, broccolini, carrot and chilli flakes (if using) with sesame dressing on prepared tray. Season with pepper and roast for about 15 minutes, until pumpkin is tender.

While vegetables roast, pat fish dry with paper towels and remove any remaining scales or bones. Cut any larger fillets in half.

Place fish on a clean plate and evenly spread miso glaze over fish to coat.

When vegetables have 5 minutes cook time remaining, remove from oven, move vegetables to one side of oven tray and carefully place fish on other side. Return fish and vegetables to oven to cook for about 5 minutes, until fish is just cooked.

While fish is cooking, thinly slice bok choy. Once vegetables have finished roasting, toss through bok choy.

place sesame pumpkin and broccolini onto a plate and top with miso-glazed fish. Squeeze over lime juice just before serving.
