Honey Soy Pork Fried Rice

Ingredients

HONEY SOY PORK FRIED RICE

  • 1½ cups jasmine rice
  • 2¼ cups water
  • ¾ teaspoon salt
  • 1 brown onion
  • 2 carrots
  • ¼ cabbage
  • 4 eggs
  • 450g pork mince
  • 1 clove garlic, minced
  • 1 tablespoon GF soy sauce
  • 250g frozen peas
  • 100g GF honey soy dressing

TO SERVE

  • 2 spring onions
  • 2-3 tablespoons roughly chopped coriander leaves and stalks (optional, adults)

Steps

  1. Combine rice, water and salt in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking. Spread cooked rice on a tray to cool a little.
  2. While rice is cooking, prepare vegetables. Finely dice onion; grate carrots; thinly slice cabbage until you have 3-4 cups worth; thinly slice green part of spring onion on an angle. Set all aside. Whisk eggs with a pinch of salt in a medium bowl. When rice is at the steaming stage, prepare the rest of the
  3. meal. Heat a drizzle of oil in a large fry-pan on medium-high heat. Pour eggs into pan and allow to set for about 2 minutes. When eggs are cooked, transfer to a board or plate, thinly slice and set aside, covered, to keep warm. Reserve pan. Heat a drizzle of oil in reserved pan on medium-high heat and
  4. cook onion for 1-2 minutes, until softened. Add mince, garlic and soy sauce and cook for 5-6 minutes, breaking up mince as it cooks, until cooked through. Set mince aside in a large bowl.   5. pan and add to bowl with mince. Reduce heat to low-medium. Add cooked rice, peas and honey soy dressing and stir-fry for about 2 minutes. Return mince and veggies to pan and toss to combine.
