Sumac Lamb with Maple Roast Butterkin and Feta Cheese

Ingredients

MAPLE ROAST BUTTERKIN AND VEGETABLES

  • 1 butterkin pumpkin
  • 1 parsnip
  • 2½ teaspoons maple syrup
  • 1 head broccoli
  • 1 capsicum

SUMAC LAMB

  • 550g lamb rump steaks (at room temperature)
  • 2 teaspoons sumac

LAMB DRIZZLE

  • 1 teaspoon maple syrup
  • ½ teaspoon vinegar (e.g. red wine, white wine)
  • 1 teaspoon mustard (e.g. Dijon, wholegrain)
  • ¼ cup mayonnaise

TO SERVE

  • 50g feta cheese

Steps

  1. oven to 230°C. Line two oven trays with baking paper.
  2. Cut butterkin into 2cm-thick wedges (leave skin on) and use a spoon to scoop out seeds. Peel and cut parsnip into 1cm thick batons. Toss both on first prepared tray with a drizzle of oil and 2 teaspoons of maple syrup. Season and roast 18-20 minutes, until tender. Turn halfway to ensure even cooking.
  3. Remove core and seeds from capsicum and slice into 2cm thick strips, and cut broccoli into small florets. Toss on second prepared tray with remaining ½ teaspoon maple syrup and a drizzle of oil. When butterkin and parsnip have 10 minutes cook time remaining, roast greens (on rack below) for about 10 minutes, until tender.
  4. Pat lamb dry with paper towels, season with salt and coat with sumac. Heat a drizzle of oil in a large fry-pan on high heat. Cook lamb for about 2 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside covered with foil, to rest for 5 minutes.
  5. Mix all sumac lamb drizzle ingredients together in a small bowl. Slice rested lamb thickly on an angle. Toss all roasted vegetables together on one tray, or serving plate if desired.
  6. spoon maple roast butterkin and vegetables onto plates, crumble over feta and top with sumac lamb. Spoon over lamb drizzle.
