Warm Roast Pumpkin and Puy Lentil Salad with Candied Walnuts

Ingredients

ROAST PUMPKIN AND PUY LENTIL SALAD

  • 100g Puy lentils
  • 400g pumpkin, peeled and diced 1-2cm
  • ½ red onion, cut into 1-2cm-thick wedges
  • ½ punnet cherry tomatoes
  • 75g feta cheese
  • 50g semi-dried tomatoes
  • ½ bag rocket leaves

CANDIED WALNUTS

  • 50g chopped walnuts
  • 1½ teaspoons runny honey
  • 2 teaspoons olive oil

DRESSING

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 clove garlic, finely minced or finely grated
  • 1 teaspoon Dijon mustard
  • ½ teaspoon runny honey

Steps

  1. oven to 230°C. Bring a small pot of salted water to the boil. Line an oven tray with baking paper.
  2. Cook lentils in pot of boiling water for 20-25 minutes, until just tender with a slight bite. Drain and rinse under cold water then set aside.
  3. While lentils cook, toss pumpkin and onion on prepared tray with a drizzle of oil and season with salt and pepper. Roast pumpkin and onion for about 15 minutes, until tender. Turn halfway to ensure even cooking.
  4. In a small bowl mix walnuts, honey and oil together. When pumpkin has finished cooking, push veggies to one side of tray, add walnuts and cherry tomatoes and cook a further 5 minutes. Remove from oven and allow to cool slightly.
  5. Crumble feta and thinly slice semi-dried tomatoes. Set both aside. Mix all dressing ingredients together in a small bowl.
  6. Add rocket to a large bowl, along with roast pumpkin and onion and drained lentils. Toss to combine.
  7. divide pumpkin and Puy lentil salad between bowls. Scatter over roasted cherry tomatoes. Sprinkle over feta, semi-dried tomatoes and candied walnuts then drizzle over dressing.
