Beef Burgers with Sprouted Buns and Lettuce Slaw

Burgers, a classic family favourite.


Ingredients

CRISPY POTATO CUBES

  • 400g roasting potatoes, scrubbed and diced 1.5cm
  • 1 tablespoon olive oil

SWEET CHILLI MAYO

  • ¼ cup mayonnaise
  • 2 teaspoons GF mild sweet chilli sauce

BEEF BURGERS

  • 450g beef mince
  • ½ red onion, finely diced
  • 1½ tablespoons GF burger spice mix
  • 2 teaspoons GF wholegrain mustard
  • ¾ teaspoon salt

LETTUCE SLAW

  • 1 tablespoon mayonnaise
  • 1 teaspoon GF vinegar (e.g. red wine, white wine)
  • ½ teaspoon GF mustard (e.g. Dijon, wholegrain)
  • ½ iceberg lettuce
  • 1 carrot
  • ½ red onion, thinly sliced (optional)

TO SERVE

  • 6 sprouted good seed buns
  • ¼ cup GF tomato sauce

Steps

  1. oven to 220°C. Line two oven trays with baking paper.
  2. Toss potatoes with olive oil on prepared tray. Season with salt and pepper and roast for 25-30 minutes, until golden brown. Turn once during cooking. In a small bowl, combine sweet chilli mayo ingredients and mix well. Set aside.
  3. Combine all beef burger ingredients in a large bowl, season with pepper and mix well using clean hands. Use a 1/3 cup measure to scoop out mixture and shape into 1cm-thick patties. Use your thumb to make a small indent into the centre of each patty. Place onto a plate and into the fridge to firm up while you make the slaw.
  4. Combine mayonnaise, vinegar and mustard in a large bowl and whisk until combined. Thinly shred lettuce; grate carrot; thinly slice red onion (if using). Add all to bowl with dressing and mix well. Season to taste with salt and pepper.
  5. Heat a drizzle of oil in a large fry-pan on medium heat. Cook patties for 3-4 minutes each side, or until just cooked through.
  6. While the patties are cooking, slice buns in half horizontally and place, closed, on second prepared tray. Warm in oven (on rack below potatoes) for 4-5 minutes.
  7. spread the base of a bun with tomato sauce or sweet chilli mayo, top with lettuce slaw, a beef patty and finish with the bun lid. Serve crispy potato cubes and extra lettuce slaw on the side. Use any leftover sweet chilli mayo for dipping.
