Lean Beef and Beet Kraut

With parsnip, cauli and kale colcannon


Ingredients

PARSNIP, CAULI AND KALE COLCANNON

  • 1½ parsnips, peeled and diced 2-3cm
  • ¼ head cauliflower, roughly cut into florets
  • ½ teaspoon oil, for cooking (or use spray oil)
  • 50g curly kale
  • ½-1 clove garlic, minced
  • 2 teaspoons water
  • 1/4 teaspoon salt
  • ½-1 spring onion, thinly sliced

LEAN BEEF

  • 275g lean bistro steaks (eye of rump) (at room temperature)
  • ½ teaspoon oil, for cooking (or use spray oil)

TO SERVE

  • 75g Heartbeet Kraut
  • 30g feta cheese (optional)

Steps

  1. a medium pot of salted water to the boil.
  2. Cook parsnips and cauliflower in pot of boiling water for about 15 minutes, until parsnips are soft. Drain well.
  3. While parsnips and cauliflower are cooking, heat first measure of oil in a medium fry-pan on high heat. Remove tough central stalks from kale (discard stalks) and very thinly slice leaves.
  4. Add kale, garlic and a pinch of salt to pan and stir-fry for about 30 seconds. Add water and toss to steam kale, for a further 30 seconds, until wilted. Remove from pan and set aside. Wipe pan clean with paper towels and turn pan to high heat.
  5. While pan heats, season beef with salt and pepper and rub in second measure of oil. Add beef to pan and cook for about 3 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered with foil, to rest for 2–3 minutes before slicing thinly against the grain.
  6. Mash parsnips and cauliflower with salt. Stir through kale, garlic and spring onion, until combined. Season to taste with pepper.
  7. place parsnip, cauli and kale colcannon and beef onto plates, along with any beef resting juices. Serve with Heartbeet Kraut on the side and crumble over feta (if using).
