Mini Chicken and Veggie Meatloaves with Lemon Pepper Kumara Chips

A deliciously balanced meal, packed with hidden veggies!
Ingredients
LEMON PEPPER KUMARA CHIPS
- 600g orange kumara, scrubbed and cut into 1cm-thick chips
- 1 teaspoon lemon pepper (optional, adults)
CHICKEN MEATLOAVES
- 450g chicken mince
- ½-1 brown onion, finely diced until you have ½ cup worth
- 1 carrot, grated
- 1 courgette, grated
- 3 tablespoons finely chopped parsley leaves and stalks
- 1 egg, lightly beaten
- 1 teaspoon salt
- ½ cup grated Colby cheese
- 1 cup panko breadcrumbs
TOPPING
- 2 tablespoons wholegrain mustard
- 2 tablespoons tomato sauce
- 2 tablespoons panko breadcrumbs
- ½ cup grated Colby cheese
TOMONNAISE
- ¼ cup mayonnaise
- 1 tablespoon tomato sauce
TO SERVE
- ½ telegraph cucumber

oven to 220°C. Line an oven tray with baking paper. Grease a 12-hole muffin tin (alternatively, line a second oven tray with baking paper).

Toss kumara on prepared tray with a drizzle of oil and lemon pepper (if using). Season with salt and bake for 20-25 minutes, until tender. Turn once to ensure even cooking.

In a large bowl combine all chicken meatloaf ingredients, season with pepper and mix well. Divide mixture into muffin tins (alternatively, scoop ½ cup measures of mixture and roll into balls then place on second prepared tray).

Use a teaspoon to spread a little mustard, then tomato sauce, over the top of each meatloaf. Sprinkle over second measures of breadcrumbs and grated cheese. Cook (on oven rack above kumara) for 15-20 minutes, until cooked through. Turn oven to high grill and grill for about 2-3 minutes, until tops are golden.

In a small bowl mix tomonnaise ingredients together. Cut cucumber in half lengthways then thinly slice. Add to a medium bowl and season to taste.

place mini chicken meatloaves and lemon pepper kumara chips onto plates. Serve sliced cucumber and a dollop of tomonnaise on the side.
