Marinated Beef Steak with Spinach, Basil and Feta Smash

Tender steaks in a classic marinade that wins every time!


Ingredients

MARINATED BEEF STEAK

  • 550g beef sirloin steaks (at room temperature)
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons brown sugar
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 2 teaspoons Dijon mustard
  • ½ teaspoon salt

SPINACH, BASIL AND FETA SMASH

  • 600g potatoes, scrubbed and diced 2cm
  • 600g potatoes, scrubbed and diced 2cm 1-2 teaspoons mustard (e.g. Dijon, wholegrain)
  • 1 tablespoon butter
  • 2-3 tablespoons milk
  • 3 tablespoons chopped basil leaves
  • 1/3 bag baby spinach leaves, finely chopped
  • 100g feta cheese, crumbled

WARM PEA AND COURGETTE SALSA

  • 1 courgette
  • 1½ cups frozen peas
  • 25g feta cheese, crumbled (optional, adults)

Steps

  1. a medium pot of salted water to the boil.
  2. Pat beef dry with paper towels. Mix all remaining marinated beef steak ingredients together in a medium, shallow dish, add beef and toss to coat. Set aside to marinate while you prepare the rest of the meal.
  3. Cook potatoes in pot of boiling water for 12-14 minutes, until tender. Drain well and return to pot. While potatoes cook, bring a small pot of salted water to the boil. Dice courgette 1cm and set aside.
  4. Heat a little oil in a large frypan on high heat. Cook beef for about 2 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside on a plate, covered with foil, to rest for 5 minutes before slicing thinly against the grain.
  5. Add courgette and peas to small pot of boiling water and cook for 2-3 minutes, until just tender. Drain, place in a medium bowl, fold through feta (if using) and season with salt and pepper.
  6. Roughly smash potatoes with a fork or potato masher then gently fold through all remaining spinach, basil and feta smash ingredients until combined. Season with salt and pepper.
  7. divide spinach, basil and feta smash between plates, top with slices of marinated beef steak and pour over any resting juices. Serve pea and courgette salsa on the side.
