Pulled Beef Tagine with Date and Middle Eastern Couscous

Ingredients

PULLED BEEF TAGINE

  • ½ red onion, thinly sliced
  • ½ carrot, grated
  • 1 garlic clove, minced
  • 1-2 teaspoons tagine spice
  • 150g pulled beef
  • ½ can whole peeled tomatoes
  • ½ cup vegetable stock
  • 1½ tablespoons chopped parsley leaves

DATE AND MIDDLE EASTERN MYSTERY COUSCOUS

  • 2 teaspoons sumac pistachio blend
  • ¼ cup vegetable stock or water
  • ¼ cup couscous
  • 2 tablespoons date mix
  • ¼ teaspoon salt
  • 1 tablespoon finely diced red onion
  • ½ tomato, diced 1cm
  • Zest and juice of ½ lemon

TO SERVE

  • 1 teaspoon sumac pistachio blend
  • 1 tablespoon picked parsley leaves

Steps

  1. Heat a drizzle of oil in a medium pot on medium heat. Add onion, carrot and garlic and cook for about 2-3 minutes, until softened but not browned. Add tagine spice and cook for 1 minute, until fragrant.
  2. Add pulled beef, canned tomatoes and stock and bring to a gentle simmer on a low heat. Cook for about 8 minutes, until sauce has reduced and thickened. Add parsley and season to taste with salt and pepper.
  3. While pulled beef tagine simmers, prepare date and tomato couscous. In small pot, toast middle eastern spice mix for about 1 minute, until fragrant. Add stock and bring to the boil on high heat.
  4. Once boiling turn off heat and add couscous, date mix and salt. Stir, cover and leave for 5 minutes to soak before fluffing up grains with a fork.
  5. Add all remaining date and tomato couscous ingredients, along with a drizzle of olive oil and season to taste with salt and pepper. Set aside and keep warm.
  6. place date and tomato couscous in the middle of each plate and top with pulled beef tagine. Sprinkle with middle eastern mystery spice and parsley.
