Roast Pumpkin, Caramelised Onion and Blue Cheese Pizza

Creamy Blue cheese, tangy caramelised onions and sweet pumpkin – the ultimate combination for a warming winter pizza. Enjoy!


Ingredients

ROAST PUMPKIN, CARAMELISED ONION AND BLUE CHEESE PIZZA

  • 300g peeled pumpkin, diced 1cm
  • 1 light wholemeal pizza base
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • ½ cup Colby cheese, grated
  • 50g baby spinach leaves, roughly chopped
  • 70g blue cheese

CARAMELISED ONIONS

  • 1 red onion, cut in half then thinly sliced
  • 1½ teaspoons brown sugar
  • 1½ teaspoon balsamic vinegar
  • 1 tablespoon water

SALAD

  • 50g baby spinach leaves
  • 1 carrot
  • 1 beetroot
  • 2 teaspoons olive oil
  • Juice of 1 lemon
  • 25g sliced almonds

Steps

  1. oven to 220°C. Line an oven tray with baking paper. Preheat a pizza stone (if you have one).
  2. Toss pumpkin on prepared tray with a drizzle of olive oil. Season with salt and pepper and roast for 12-15 minutes, until tender. Heat a drizzle of oil in a small pot on high heat. Cook onion for 5-7 minutes, until soft. Add sugar, vinegar and water and cook for 1-2 minutes, until caramelised.
  3. Lay a sheet of baking paper on bench and place pizza base on top. Mix tomato paste and oil together in a small bowl and spread evenly over base to cover.
  4. Sprinkle with grated cheese, roasted pumpkin, one handful of baby spinach (reserve remaining for salad) and caramelised onions. Crumble over 1cm chunks of blue cheese.
  5. Carefully lift baking paper with pizza on top and place onto same tray used to roast pumpkin (or pizza stone), then carefully slide baking paper away. Cook pizza for 12-14 minutes, until base is crispy and golden around the edges. Slice into 6-8 pieces and season with pepper.
  6. While pizza cooks, thinly slice remaining spinach leaves and peel and grate carrot and beetroot. Place all in a medium bowl, drizzle with oil and lemon juice, toss to combine and season
  7. divide roast pumpkin, caramelised onion and blue cheese pizza between plates. Place a handful of salad on the side.
