BISTRO BEEF WITH ROASTED WINTER VEGETABLES AND BALSAMIC JUS

A solid hit of meat and five veg! paired with balsamic Jus for an additional gourmet element.


Ingredients

ROASTED WINTER VEGETABLES

  • 300g yams, cut in half lengthways
  • ½ fennel bulb, core removed and cut into 1cm wedges
  • ½ red onion, cut into 1cm wedges
  • 1 teaspoon vegetable spice mix
  • ½ pack broccolini, ends trimmed 1cm
  • 1 tablespoon olive oil
  • ½ tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • ½ bag baby kale leaves

BISTRO BEEF

  • 300g beef bistro fillet (at room temperature)

TO SERVE

  • 1 pottle balsamic jus

Steps

  1. oven to 220°C. Line a large oven tray with baking paper.
  2. Toss yams, fennel, red onion and vegetable spice mix together on prepared tray with a drizzle of olive oil and season with salt and pepper. Roast for about 15 minutes. After 15 minutes, toss through broccolini and cook for a further 15 minutes, until vegetables are tender and golden.
  3. When broccolini is cooking, pat beef dry with paper towels and season with salt and pepper.
  4. Heat a drizzle of oil in a medium fry-pan on mediumhigh heat. Cook beef for 2-3 minutes each side for mediumrare (depending on thickness) or until cooked to your liking. Set aside to rest, covered in foil, for about 5 minutes. Reserve pan.
  5. In a small bowl combine olive oil, balsamic vinegar and mustard. Whisk until smooth and season with salt and pepper. Return pan used for beef to low heat. Add balsamic jus and cook for about 2 minutes, until just simmering. Remove from heat and set aside.
  6. When vegetables have finished cooking, remove from oven, drizzle with balsamic dressing and toss through baby kale. Slice beef thinly against the grain.
  7. divide roasted winter vegetables between plates. Top with slices of beef and spoon over hot balsamic jus.
