Beef Steak with Roast Veggies and Onion Gravy

Ingredients
ROAST VEGGIES
- 1 bag 2cm diced potatoes, any liquid drained
- 1 teaspoon paprika
- ¼ cauliflower
- 1 bag chopped carrot and parsnip
- 1 teaspoon paprika
BEEF STEAK AND ONION GRAVY
- 1 brown onion
- 1 pack beef sirloin steaks (at room temperature)
- 2 tablespoon butter
- 2½ tablespoons flour
- 2 teaspoons gravy spice mix
- 2 cups beef stock

oven to 230°C. Line two oven trays with baking paper.

Pat potatoes dry with paper towels and toss on first prepared tray with first measure of paprika and a drizzle of oil. Season with salt and pepper and roast (on highest rack) for about 15 minutes. Turn oven to high grill and cook for about 10 minutes, until golden and crispy

Cut cauliflower into large florets and toss on second prepared tray with carrot and parsnip mix, second measure of paprika and a drizzle of oil. Season with salt and pepper and cook (on rack below potatoes) for about 15 minutes. Leave in oven to continue cooking while potatoes are grilling.

Thinly slice onion and set aside. Pat beef dry and season with salt and pepper. Heat a drizzle of oil in a large fry-pan on high heat. Cook beef for about 2 minutes each side for medium rare (depending on thickness). Set aside, covered with foil to rest while you prepare the gravy.

Return pan to a medium heat with a drizzle oil. Cook onion for about 3 minutes, until softened. Add butter, flour and gravy spice mix to pan and cook for about 1 minute, until combined and fragrant.

Slowly add stock to pan, stirring constantly, until combined. Bring to a gentle simmer and cook for 3-5 minutes, until thickened. Season to taste with salt and pepper. Slice steak thinly against the grain.
