CAJUN SPICED LAMB WITH MAPLE ROASTED PUMPKIN, BROCCOLI AND FETA

The mango and coconut sauce pairs perfectly with the lamb!


Ingredients

MAPLE ROASTED PUMPKIN, BROCCOLI AND FETA

  • 150g peeled pumpkin, diced 1-2cm
  • ¼ red onion, cut into 1cm wedges
  • ½ head broccoli, cut into small florets
  • 2 teaspoons maple syrup or runny honey
  • Pinch of chilli flakes (optional)
  • ½ courgette
  • 2 tablespoons chopped walnuts
  • 30g feta cheese, crumbled
  • 1/3 bag baby spinach leaves

CAJUN SPICED LAMB

  • 150g lamb leg steak (at room temperature)
  • 1 teaspoon Cajun spice mix

MANGO YOGHURT

  • 2 tablespoons natural yoghurt
  • 1 tablespoon mango and coconut sauce

Steps

  1. oven to 220°C. Line an oven tray with baking paper.
  2. Toss pumpkin, onion, broccoli, maple syrup/honey and chilli flakes (if using) with a drizzle of oil on prepared tray and season with salt and pepper. Cook for about 15 minutes until tender and starting to caramelise. Turn once during cooking.
  3. While vegetables cook, peel courgette into thin ribbons, stopping when you reach the core (discard core). When vegetables have 5 minutes cook time remaining, add walnuts and feta and return to oven for 5 minutes, until walnuts are toasted. Remove from oven and toss through courgette and spinach.
  4. Pat lamb dry with paper towels and season with salt. Rub Cajun spice mix over both sides. Heat a drizzle of oil in a medium frypan on medium-high heat.
  5. Cook lamb for about 2 minutes each side for medium-rare (depending on thickness) or until cooked to your liking. Set aside, covered with foil, to rest for 2-3 minutes. Slice lamb thickly against the grain.
  6. While lamb rests, combine all mango yoghurt ingredients in a small bowl. Season to taste with salt and pepper.
  7. divide maple roasted pumpkin, broccoli and feta between plates. Top with Cajun spiced lamb and dollop over mango yoghurt.
