CHICKEN POPPERS WITH HAND-CUT CHIPS, SLAW AND BBQ SAUCE

Ingredients

HAND-CUT CHIPS

  • 600g potatoes, scrubbed and cut into 1cm-thick chips

CHICKEN POPPERS

  • 550g chicken thighs, diced 2cm
  • 2 teaspoons GF chicken poppers spice mix
  • ½ teaspoon salt
  • 2 tablespoons GF cornflour
  • 1 egg
  • 1½ cups GF panko breadcrumbs

SLAW

  • 2 tablespoons GF mayonnaise
  • 1 teaspoon GF vinegar (e.g. red, white wine, apple cider)
  • ½ teaspoon GF mustard (e.g. Dijon, wholegrain)
  • ½ iceberg lettuce
  • 1 carrot
  • 1 apple
  • ½ telegraph cucumber

TO SERVE

  • 4-5 tablespoons GF BBQ sauce

Steps

  1. oven to 230°C. Line an oven tray with baking paper.
  2. Toss chips with a drizzle of oil on prepared tray and season with salt. Roast for 25-30 minutes, until golden and cooked through. Turn once during cooking.
  3. Place chicken in a large bowl with chicken poppers spice mix and salt and toss to coat. Sprinkle over cornflour to coat all chicken.
  4. In a small bowl (or cup), whisk egg and pour over chicken, making sure all chicken is covered with egg. Place panko breadcrumbs in a third bowl. Coat chicken with breadcrumbs, one handful at a time.
  5. Heat a drizzle of oil in a large frypan on medium-high heat. Cook chicken, in batches, for about 2 minutes each side, until golden and just cooked through. Wipe out pan between batches and add more oil as needed. Season cooked chicken poppers with salt and pepper to taste.
  6. While chicken is cooking, in a large bowl mix mayonnaise, vinegar and mustard. Thinly slice lettuce; peel and grate carrot; cut apple into thin matchsticks (or grate); cut cucumber in half lengthways then thinly slice. Add all to bowl with dressing and toss to combine.
  7. divide hand-cut chips, chicken poppers and slaw between plates. Serve BBQ sauce on the side.
