BEEF MASSAMAN PEANUT CURRY WITH ASIAN GREENS

A super quick curry


Ingredients

BEEF MASSAMAN PEANUT CURRY

  • 1 beef massaman peanut curry

ASIAN GREENS

  • ½ bunch broccolini
  • 1 baby bok choy, end trimmed

TO SERVE

  • 1 sachet of chopped, roasted peanuts (optional)

Steps

  1. oven to 220°C. Bring a full kettle to the boil.
  2. Remove plastic seal and place beef massaman peanut curry on a baking tray. Cook in oven for 20 minutes. Stir and return to oven for a further 5-10 minutes, until heated through.
  3. While curry is cooking, cut broccolini and bok choy leaves in half lengthways and set aside in a large bowl with a pinch of salt.
  4. When beef massaman peanut curry has about 5 minutes cook time remaining pour boiling water over veggies and cover. Steam for about 5 minutes until tender. Drain and return to bowl.
  5. spoon beef massaman peanut curry onto plates and serve Asian greens on the side. Sprinkle over chopped peanuts (if using).
