Lemon Chicken with Spring Potato Salad

Ingredients

Spring Potato Salad

  • Spring Potato Salad 1 bag diced potatoes, any liquid drained
  • 2 teaspoons garlic paste
  • ½ bunch broccolini, cut into 3cm pieces
  • 250g frozen corn
  • 1 carrot
  • 1 pottle herb aioli
  • Juice of ½ lemon

Lemon Chicken

  • 1 pack chicken breast steaks
  • 1 teaspoon runny honey
  • 1 teaspoon mustard (e.g. Dijon, wholegrain)
  • Zest of ½ lemon
  • Juice of ½ lemon
  • Drizzle of olive oil

To Serve

  • 1 sachet toasted, slivered almonds

Steps

  1. Preheat oven to 230°C. Line an oven tray with baking paper. Pat potatoes dry with paper towels and toss on prepared tray with garlic paste and a drizzle of oil. Season and bake (on second highest rack) for about 20 minutes, until tender. Turn once during cooking. Turn oven to high grill. Grill potatoes for about 5 minutes, until golden and crispy.
  2. While potatoes cook, pat chicken dry with paper towels. Add all lemon chicken ingredients to a large bowl, season with salt and pepper and toss to coat well. Heat a drizzle of oil in a large fry-pan on medium-high heat.
  3. Cook chicken for about 3 minutes each side (depending on thickness), or until just cooked through. Remove and set aside, covered with foil to rest. Season with salt before slicing thickly.
  4. Place broccolini, corn and a pinch of salt in a large, heat-proof bowl and cover with boiling water. Cover with a plate and leave for about 5 minutes, until bright green and tender. Drain and toss with a drizzle of olive oil.
  5. Grate carrot. Add carrot and cooked potatoes to bowl with broccolini, along with herb aioli and lemon juice. Gently toss to combine and season to taste with salt and pepper.
  6. To serve, divide spring potato salad between plates and top with lemon chicken and a sprinkle of almonds.
