Falafel Kebabs with Tzatziki and Salad

For an authentic experience, you can wrap your kebab in foil and place it in the toasted sandwich machine for a couple minutes to meld all the delicious flavours together!


Ingredients

Falafel

  • 1 tub jalapeño falafel mix
  • ¼ teaspoon salt
  • ½ carrot, grated

Tzatziki

  • ½ Lebanese cucumber
  • 2 baby turnips
  • ½-1 clove garlic, minced
  • Zest and juice of ½ lemon
  • ½ pottle natural yoghurt
  • ¼ teaspoon salt
  • 1-2 tablespoons roughly chopped mint leaves

Salad

  • ½-1 avocado
  • ¼ red onion
  • 1 carrot, grated
  • 1/3 bag baby spinach leaves
  • 50g feta cheese, crumbled

To Serve

  • 4 Lebanese breads

Steps

  1. Preheat oven to 200oC. Combine all falafel ingredients in a medium bowl. Heat a good drizzle of oil in a large fry-pan on medium heat. Using a heaped tablespoon measure, scoop out mixture and dollop straight into the pan, using the back of the spoon or spatula to lightly flatten into patties.
  2. Cook patties, in batches, for 2-3 minutes each side, until golden and cooked through. Add more oil to pan as needed. Set aside on a paper towel to drain any excess oil.
  3. While falafel cook, grate cucumber and squeeze firmly to remove excess liquid. Very finely dice radishes and add both to a small bowl with all remaining tzatziki ingredients. Mix to combine and season to taste with pepper. Set aside.
  4. Place wraps in foil and heat in oven for about 10 minutes to warm through.
  5. Cut avocado in half lengthways and twist halves to separate. Remove stone, spoon out flesh and thinly slice. Thinly slice onion, peel and grate carrot. Add all salad ingredients to a bowl and toss to combine.
  6. To serve, fill wraps with salad, a couple of falafel patties and a generous drizzle of tzatziki.
