Chorizo, Feta and Olive Pizzas

Leave mint off one of the pizzas for younger foodies and allow your pizzas to cool slightly before slicing.


Ingredients

Chorizo, Feta and Olive Pizzas

  • 1 tub tomato paste
  • 2 tablespoons sweet chilli sauce
  • 2 wholemeal pizza bases
  • 1 pack grated three cheese
  • 1 pack chorizo grind
  • 1 capsicum, core and seeds removed, thinly sliced
  • ½-1 pack green olives (optional, adults)
  • ½ pottle feta cheese
  • 2 tablespoons mint leaves, roughly chopped

Salad

  • 2 tablespoons natural yoghurt
  • 1 teaspoon mustard (e.g. wholegrain, Dijon)
  • 1 teaspoon runny honey
  • 1 carrot
  • 1 tomato
  • 1 baby cos lettuce

To Serve

  • Remaining natural yoghurt

Steps

  1. Preheat oven to 220°C. Preheat two oven trays (or two pizza stones if you have them). In a small bowl, combine tomato paste and sweet chilli sauce and mix well. Lay two sheets of baking paper on the bench and place pizzas on top. Evenly cover bases with tomato mixture.
  2. Sprinkle grated cheese evenly over the bases. Using clean hands, tear away small amounts of chorizo grind and dot over top. Evenly sprinkle over capsicum and olives (if using) and crumble over feta cheese. Season with pepper.
  3. Carefully lift up baking paper with pizzas on top and place one onto each preheated tray, then carefully slide baking paper away (use a fish slice to help with this). Cook for 12-14 minutes, until bases are crispy and golden. Swap trays halfway to ensure even cooking.
  4. While pizzas are cooking, prepare the salad. Combine yoghurt, mustard and honey in a large bowl. Grate carrot; dice tomato 1cm; roughly chop lettuce. Add to bowl and toss to combine. Season to taste with salt and pepper.
  5. Sprinkle mint over pizzas and slice each pizza into 6-8 pieces.
  6. To serve, divide salad and slices of pizza between plates and drizzle over remaining yoghurt.
