Cheesy Lamb Meatloaves with Creamy Mash

If you don’t have a muffin tin, simply place all mix into a lined loaf tin or small baking dish (measuring about 15 x 20cm), and top with tomato sauce and cheese. Bake for about 25-30 minutes, until cooked through and cheese is golden.


Ingredients

Cheesy Lamb Meatloaves

  • ½ brown onion, finely diced
  • 1 carrot, grated
  • ½ parsnip, grated
  • 1 tablespoon meatloaf spice mix
  • 300g lamb mince
  • 1 egg
  • 1/3 cup fine breadcrumbs
  • ½ teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato sauce
  • ½ cup grated Colby cheese

Creamy Mash

  • 400g potatoes, scrubbed and diced 2cm
  • 1 tablespoon butter
  • 2 tablespoons milk

Broccoli

  • 1 head broccoli, diced 2cm
  • 1 tablespoon water
  • ½ tablespoon balsamic vinegar

To Serve

  • 2-3 tablespoons tomato sauce or tomato relish (optional)

Steps

  1. Preheat oven to 200°C. Lightly grease 6-7 muffin tins. Bring a medium pot of salted water to the boil. Heat a drizzle of oil in a medium fry-pan on mediumhigh heat. Cook onion, carrot, parsnip and a pinch of salt for about 5 minutes, until tender. Add meatloaf spice mix and cook for 1-2 minutes, until fragrant. If spices start to stick, add a splash of water to lift.
  2. In a large bowl, combine mince, egg, breadcrumbs, salt and Worcestershire sauce. Add cooked vegetables, season with pepper and mix well.
  3. Divide the mixture into 6 or 7 balls then lightly press into each greased muffin hole. Evenly top each mini meatloaf with tomato sauce and cheese. Bake for about 20 minutes, until just cooked through and cheese is golden.
  4. While meatloaves bake, cook potatoes in pot of boiling water for about 15 minutes, until tender. Drain well, return to pot with butter and milk and mash well. Season to taste with salt and pepper. Set aside, covered, to keep warm.
  5. While potatoes cook, return pan to high heat with a drizzle of oil. Add broccoli and cook for 2-3 minutes, until beginning to char. Add water and balsamic vinegar, and cook a further 1 minute to evaporate. Season to taste with salt and pepper.
  6. To serve, spoon creamy mash onto plates and top with broccoli and cheesy lamb meatloaves. Serve with tomato sauce/relish (if using).
