Beef Steak with Loaded Fries and Salad

Alternatively use BBQ hot plate or grill to cook beef. Cook for about 2-3 minutes each side for medium.


Ingredients

Loaded Fries

  • 1 bag potato chips
  • 1 tablespoon smoked spice mix
  • 1 capsicum
  • 2 spring onions
  • ½ bag grated gouda cheese
  • ½ tub sour cream

Beef Steaks

  • 1 pack beef rump steaks (at room temperature)
  • 1 tablespoon smoked spice mix

Salad

  • ½ iceberg lettuce
  • ½ telegraph cucumber
  • ½-1 sachet Greek vinaigrette

Steps

  1. Preheat oven to 230°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to high (if using). Pat chips dry with paper towels and toss on prepared tray with first measure of smoked spice mix and a drizzle of oil. Season with salt and pepper and arrange into a single layer. Bake chips in oven (on second highest rack) for about 15 minutes, until tender. Turn oven to high grill.
  2. Grill chips for about 5 minutes, until golden and crispy. Remove core and seeds from capsicum and dice 2cm. Thiny slice spring onions. When fries are golden, sprinkle over capsicum, spring onions and cheese and grill for a further 5 minutes, until cheese is melted and golden.
  3. While the chips are grilling, heat a drizzle of oil in a large fry-pan on high heat. Pat beef dry with paper towels, toss with second measure of smoked spice mix and a drizzle of oil in a small bowl and season with salt and pepper.
  4. Cook beef for 2-3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside to rest, covered with foil.
  5. Roughly tear lettuce leaves and thinly slice cucumber. Place in a medium bowl with Greek vinaigrette and toss to combine. Season with salt and pepper.
  6. To serve, divide beef steaks and loaded fries between plates and top with a dollop of sour cream. Serve salad on the side.
