Pork, Apple and Cranberry Burgers with Lettuce Slaw

Alternatively, cook patties on BBQ for 2-3 minutes each side, until cooked through. To save time, you can prepare burger patties in advance and store, covered, in the fridge, until needed. Keep some slaw plain for fussier foodies


Ingredients

Pork, Apple and Cranberry Burger Patties

  • ½ carrot
  • ½ courgette
  • 450g pork, apple and cranberry sausage grind
  • ¼ cup panko breadcrumbs
  • 1 teaspoon Worcestershire sauce

Lettuce Slaw

  • 2 tablespoons mayonnaise
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • ½ teaspoon mustard (e.g. Dijon, wholegrain)
  • 1 apple
  • ½ punnet cherry tomatoes
  • ½ telegraph cucumber
  • ½ carrot
  • ½ courgette
  • 1 baby cos lettuce

Mustard Mayo (optional, adults)

  • ¼ cup mayonnaise
  • 2 teaspoons mustard (e.g. Dijon, wholegrain)

To Serve

  • 5-6 burger buns
  • 2-3 teaspoons butter (optional)

Steps

  1. Preheat oven to 150°C. Line an oven tray with baking paper. Preheat BBQ hot plate to medium (if using). Grate first measures of carrot and courgette until you have ½ cup of each. Place into a large bowl, along with pork grind, breadcrumbs and Worcestershire sauce, Mix together well using clean hands.
  2. Using a 1/3 cup measure, scoop out mixture and shape into 1cm-thick burger patties.
  3. Combine first measure of mayonnaise, vinegar and mustard in a large bowl. Cut apple into thin matchsticks; cut cherry tomatoes in half; cut cucumber in half lengthways then thinly slice; grate second measure of carrot and courgette; thinly slice lettuce. Add all to bowl with dressing and toss to combine.
  4. Combine first measure of mayonnaise, vinegar and mustard in a large bowl. Cut apple into thin matchsticks; cut cherry tomatoes in half; cut cucumber in half lengthways then thinly slice; grate second measure of carrot and courgette; thinly slice lettuce. Add all to bowl with dressing and toss to combine.
  5. While patties are cooking, slice buns in half horizontality then place buns, closed, on prepared tray. Warm in oven for about 5 minutes. Combine all mustard mayo ingredients in a small bowl (if using).
  6. To serve, place buns, lettuce slaw and patties in the middle for the table for everyone to help themselves. Spread buns with mustard mayo or butter (if using), top with a burger patty, a small handful of lettuce slaw and finish with the top of the bun. Serve remaining lettuce slaw on the side.
