Lemongrass Beef with Vermicelli

Use the lettuce cups as little boats to pile your lemongrass beef, noodles and herbs into before eating.


Ingredients

Lime Sweet Chilli Dressing

  • Juice of ½ lime
  • 2 tablespoons sweet chilli sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon fish sauce

Lemongrass Beef

  • 100g vermicelli noodles
  • ¼ teaspoon sesame oil
  • ½ brown onion, finely diced
  • 1 clove garlic, minced
  • 1 pottle lemongrass makrut lime paste
  • 300g beef mince
  • 2 teaspoons fish sauce
  • Zest and juice of ½ lime

To Serve

  • ½ telegraph cucumber
  • ½ chilli, cut in half lengthways
  • 1 baby cos, end trimmed 1cm
  • ½ pack mung bean sprouts
  • 2 tablespoons chopped peanuts
  • 5 tablespoons picked Thai basil leaves
  • 2 tablespoons picked mint leaves

Steps

  1. Bring a full kettle to the boil. Slice cucumber in half lengthways and thinly slice on an angle. Remove seeds from chilli and thinly slice. Separate leaves from baby cos and set aside. In a small bowl, combine all lime sweet chilli dressing ingredients. Set aside.
  2. Add noodles to a heat-proof bowl and cover with boiling water, use a fork to separate strands. Leave for 5 minutes then drain well. Return to bowl with sesame oil, stir and set aside to keep warm.
  3. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook onion and garlic for 2-3 minutes, until soft. Add lemongrass makrut lime paste and cook for a further 1 minute, stirring constantly, until fragrant.
  4. Add beef mince and cook for 3-4 minutes, breaking up with a wooden spoon as it cooks, until browned. Add fish sauce, lime zest and juice, and season to taste with salt and pepper.
  5. To serve, divide vermicelli between plates and top with lemongrass beef. Sprinkle over mung bean sprouts and peanuts. Garnish with chilli, Thai basil and mint. Serve lettuce cups and cucumber on the side.
