Chorizo and Apple Pizzas

Preheating your oven trays (or pizza stones if you have them), leaves you with a crispy pizza base. Rotating pizzas halfway during cooking allows pizzas to crisp evenly.


Ingredients

Chorizo and Apple Pizzas

  • 3 whole-wheat pizza bases
  • 1 red onion, cut in half, then thinly sliced
  • 2 teaspoons brown sugar
  • 2 teaspoons balsamic vinegar
  • 2 tablespoons water
  • 70g tomato paste
  • 1 tablespoon mild sweet chilli sauce
  • 1 tablespoon oil
  • 1½ cups grated cheese
  • 1 apple, diced 1cm
  • 300g chorizo grind

Salad

  • 2 teaspoons olive oil
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • ¼ teaspoon maple syrup or honey
  • ½ bag baby spinach
  • ½ telegraph cucumber
  • ½ punnet cherry tomatoes

Steps

  1. Preheat oven to 220°C. Preheat two oven trays (or pizza stones if you have them). Lay two sheets of baking paper on a bench. Cut one pizza base in half. Place one and a half bases on each sheet of baking paper.
  2. Heat a drizzle of oil in a medium pot on medium-high heat and cook onions for 5-7 minutes, until softened. Add sugar, balsamic vinegar and water and cook a further 1-2 minutes, until caramelised. Season with salt and pepper.
  3. While the onions cook, mix together tomato paste, sweet chilli sauce and oil in a small bowl. Evenly spread sauce over bases and sprinkle with cheese. Top with caramelised onions and apple. Using clean hands, tear off small chunks, about 2cm, of chorizo and place evenly over pizzas.
  4. Carefully lift baking paper with pizza bases on top and place onto preheated trays (or stones). Carefully slide baking paper away (use a fish slice to help with this). Cook pizzas for 12-14 minutes until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.
  5. While pizzas are cooking, mix oil, vinegar and honey/ maple syrup together in a medium bowl. Roughly chop spinach; cut cucumber in half lengthways, remove seeds with a teaspoon then thinly slice; cut cherry tomatoes in half. Add veggies to bowl and toss to combine. Season to taste.
  6. To serve, slice chorizo and apple pizzas into wedges and divide between plates. Serve salad on the side.
