Beef Burrito Bowls

We have included a chipotle sauce for adults to spice things up a little. Just drizzle a little on top of your burrito bowl.
Ingredients
Rice
- 1½ cups brown rice
- 2 cups water
Beef Burrito Bowls
- ½ brown onion
- 1 carrot
- 1 tablespoon burrito spice mix
- 1 can chopped tomatoes
- ½ cup beef stock
- 400g pulled beef
- 1 tablespoon soy sauce
- ½ teaspoon brown sugar
Sour Cream
- 125g sour cream
- 2 teaspoons mild sweet chilli sauce (optional)
To Serve
- 1/2 cos lettuce
- 1 tomato
- 1 cup grated cheese
- 1-2 tablespoons chipotle sauce (optional, adults)

Combine rice, water and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

While rice cooks, finely dice onion and grate carrot. Heat a drizzle of olive oil in a fry-pan on mediumhigh heat. Cook onion and carrot for 3-4 minutes until softened. Add burrito spice mix and cook for 1 minute until fragrant.

Add canned tomatoes, stock, pulled beef, soy sauce and sugar. Bring to a simmer and cook for 4-5 minutes, breaking up beef with a wooden spoon, until meat is heated through and sauce has thickened. Season to taste.

In a small bowl, mix sour cream with sweet chilli sauce (if using).

Thinly slice lettuce and dice tomato.

To serve, place ¾ cup cooked rice into each bowl. Top with pulled beef, lettuce, tomato, cheese and a dollop of sour cream. Drizzle with chipotle sauce (if using).
