Pork and Apple Burgers with Creamy Slaw and Pear Sauce

Keep some slaw separate and leave the pear sauce and tomato out of burgers for fussy eaters


Ingredients

Pork and Apple Burgers

  • 1 apple, peeled and diced 1cm
  • 1 spring onion, white part only, thinly sliced (reserve green part)
  • 550g pork grind
  • ½ teaspoon salt
  • 6 burger buns

Creamy Slaw

  • 1½ tablespoons mayonnaise
  • ¾ teaspoon mild sweet chilli sauce
  • ¼ teaspoon fish sauce
  • 1 teaspoon vinegar (e.g. white wine, red wine, cider)
  • ½ cos lettuce
  • 1 carrot
  • ½ telegraph cucumber
  • 1-2 spring onions, green part only

To Serve

  • Mayonnaise (optional)
  • 1 tomato, thinly sliced
  • 100g pear chutney

Steps

  1. Preheat oven to 200°C. Line two oven trays with baking paper. Preheat BBQ hot plate or grill to medium (if using). Prepare veggies. Heat a drizzle of oil in a large fry-pan on mediumhigh heat and cook apple for 2-3 minutes. Add white part of spring onion and cook a further 1 more minute, until tender. Reserve pan.
  2. Place apple mix into a medium bowl and leave for about 2 minutes to cool slightly. Add pork grind and salt to bowl and mix. Using a 1/3 cup measure scoop out mix and shape into 6 patties, about 2cm-thick.
  3. Return pan to a medium heat and cook patties for 3-4 minutes each side, until cooked through. Transfer to first prepared tray.
  4. While patties are cooking, mix mayonnaise, sweet chilli sauce, fish sauce and vinegar together in a medium bowl. Set aside. Slice burger buns in half horizontally and place, on second prepared tray. Place buns and patties in oven for 5 minutes, until warmed through.
  5. Thinly slice lettuce; grate carrot; thinly slice green part of spring onion; cut cucumber in half lengthways and thinly slice. Add to bowl with dressing and toss to combine. Season to taste.
  6. To serve, spread a little extra mayonnaise onto each burger bun (if desired). Top with a patty, a slice of tomato and some creamy slaw. Dollop over pear chutney and finish with top of bun. Serve remaining creamy slaw on the side.
