Beef with Bacon Cabbage Fritters and Russian Dressing

Alternatively use BBQ grill to cook beef. Cook for about 2 minutes each side for medium-rare.


Ingredients

Kumara Fries

  • 100g red kumara, cut into 0.5cm fries
  • ½ teaspoon chilli flakes

Chicken Katsu

  • 2 black brioche buns, cut in half
  • 300g chicken thigh
  • ¼ cup flour, mixed with ¼ teaspoon salt
  • 1 egg
  • 2 tablespoons milk
  • 1 cup panko breadcrumbs
  • 1 pottle From My Kitchen Japanese Katsu Sauce
  • 1 teaspoon cornflour

Slaw

  • ¼ red onion
  • 1 spring onion
  • 1/3 bag baby spinach
  • 1 cup coleslaw
  • 1-2 tablespoons mayonnaise
  • ½ teaspoon rice wine vinegar
  • 1/8 teaspoon sugar
  • ¼ teaspoon chilli flakes

Steps

  1. Preheat BBQ hot plate or grill to high (if using). Peel and grate potato and place a clean dry tea towel and squeeze out excess moisture. Place in a medium bowl along with remaining bacon cabbage fritter ingredients, mix well to combine. Season to taste.
  2. Heat a drizzle of oil in a medium (preferably non-stick) fry-pan on low-medium heat. Spoon ¼ cup of fritter mix into pan, flattening into 0.5cm-thick rounds. Cook in batches for 3-4 mins each side until golden brown. Reserve pan.
  3. While fritters cook, place vinegar and sugar in a small pot and bring to the boil. Thinly slice red onion then add to vinegar and sugar. Stir to coat, then remove from heat. Set aside.
  4. Carefully wipe out reserved pan with paper towels. Return pan to a medium heat with a drizzle of oil. Pat beef dry and season.
  5. Cook for 2-3 minutes each side and 1 minute on the fat cap for medium-rare (depending on thickness), or until cooked to your liking. Set aside to rest, covered, for 2-3 minutes.
  6. To serve, place bacon cabbage fritters and beef onto a plate, top with pickled red onion and dollop with Russian dressing (if using).
