Gome Dare Beef with Asian Veggies

For fussier foodies, serve rice plain and add edamame beans after serving up the kids. You could also use extra sweet chilli sauce instead of goma dare in the stir-fry.


Ingredients

Brown Rice

  • 1 cup Japanese brown rice
  • 1½ cups water
  • 250g frozen peas
  • ½ teaspoon sesame oil

Goma Dare Dressing

  • 1 clove garlic, minced
  • 2 teaspoons finely grated ginger
  • 2 teaspoons soy sauce
  • 1 tablespoon GF sweet chilli sauce
  • 80g goma dare

Beef Stir-Fry

  • 2 baby bok choy
  • 1 carrot
  • 1 red onion
  • 450g beef mince

Steps

  1. Bring a small pot of water to the boil. Combine rice, water and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.
  2. Mix all goma dare dressing ingredients in a small bowl. Thinly slice bok choy; cut carrot in half lengthways and thinly slice; thinly slice onion. Cook peas in pot of boiling water for 2-3 minutes until bright green and tender then drain.
  3. Heat a drizzle of oil in a large fry-pan on high heat. Cook beef mince for 2-3 minutes, until browned, breaking up with a wooden spoon as it cooks. Set aside, covered. Return pan to high heat.
  4. Stir-fry carrot and onion for 2 minutes then add bok choy and cook a further 2 minutes, until veggies are tender. Add goma dare dressing and beef mince, toss to combine and season. Fold peas and sesame oil through cooked rice.
  5. To serve, divide brown rice between plates or bowls and top with goma dare beef stir-fry.
