Beef and Bacon Pizzas with Avocado Salad

If your kids don’t like avocado in their salad, mash it into the cream cheese with a fork and use to top the pizzas.


Ingredients

Beef and Bacon Pizzas

  • 3 wholewheat pizza bases
  • 70g tomato paste
  • 2 tablespoons mild sweet chilli sauce
  • 1½ cups grated cheese
  • ½ can apricot halves, drained and roughly chopped
  • 300g beef and bacon grind
  • ½-¾ tub cream cheese
  • 1 spring onion (optional, adults)

Avocado Salad

  • 1 spring onion (optional, adults)
  • 1 tablespoon olive oil
  • ¼ teaspoon maple syrup or honey
  • 1-2 teaspoons vinegar (e.g. red wine, white wine, cider)
  • 1 baby cos lettuce
  • ½ telegraph cucumber
  • 1 avocado

Steps

  1. Preheat oven to 220°C. Preheat two oven trays. Prepare cheese and apricots. Lay two sheets of baking paper on bench. Cut one pizza base in half. Place one and a half bases on each sheet of baking paper. In a small bowl, mix tomato paste and sweet chilli sauce together then evenly spread over bases.
  2. Evenly sprinkle over cheese and apricots. Break off 2cm pieces of beef and bacon grind and place on pizzas (use your hands to make it easier). Use a teaspoon to dot 1cm pieces of cream cheese over pizzas. Season with pepper.
  3. Carefully lift the baking paper (with pizzas) onto preheated trays and bake for 10-12 minutes, until cheese is melted and pizza bases are golden. Swap trays halfway through to ensure even cooking. Thinly slice both measures of spring onion (if using) and set aside separately.
  4. In a large bowl, whisk oil, maple syrup/honey and vinegar together. Tear lettuce into small pieces; cut cucumber in half lengthways, scoop out seeds with a teaspoon then thinly slice; dice avocado flesh 2cm.
  5. All salad veggies to bowl with dressing and toss to combine. Season. Sprinkle remaining spring onion over cooked pizzas (if using). Slices pizzas.
  6. To serve, divide pizzas and salad between plates.
