Easy Beef and Bacon Lasagne with Béchamel Sauce

Ensure you separate the lasagne sheets as you add them to the water to prevent them from sticking together.


Ingredients

Cheat’s Beef and Bacon Lasagne

  • 1 pack fresh lasagne sheets, separated
  • 1 pack beef and bacon mince
  • 1 carrot, grated
  • 1 tablespoon beef spice mix
  • 1 jar tomato passata
  • ½ cup red wine or beef stock
  • 1 pouch Béchamel Sauce
  • ½ cup milk
  • ½ bag Swiss grated cheese
  • 2 tablespoons basil leaves, roughly chopped
  • 1 courgette, grated

Tomato Salad

  • 2 tomatoes
  • ½ punnet cherry tomatoes
  • Drizzle of olive oil
  • Drizzle of balsamic vinegar

Steps

  1. Bring a full kettle of water to the boil. Pour boiling water and a pinch of salt into a medium pot and bring to the boil with the lid on. Roughly cut pasta sheets into 4cm squares. Roughly separate pasta as you drop into boiling water and cook for about 4 minutes, until tender. Drain and toss in a bowl with a drizzle of oil to prevent sticking. Reserve pot.
  2. While pasta cooks, heat a drizzle of oil in a large fry-pan on medium-high heat. Cook mince, carrot and beef spice mix for about 3 minutes, breaking up with a wooden spoon as it cooks, until browned. Add tomato passata and wine/stock to pan and simmer on medium for about 5 minutes, until thickened.
  3. While beef and bacon sauce simmers, prepare the salad. Dice tomatoes 2cm and place in a medium bowl with cherry tomatoes, olive oil and balsamic vinegar. Toss to combine, season and set aside.
  4. Add Béchamel sauce and milk to reserved pot. Heat Béchamel on low-medium heat for about 3 minutes, whisking until smooth and heated through. Add grated cheese and fold through until melted and sauce has thickened. Season to taste.
  5. When beef and bacon sauce is cooked, stir through courgette. Season to taste. Add cooked pasta to pan with beef and bacon sauce and fold to combine. Evenly pour over béchamel sauce and top with basil leaves.
  6. To serve, divide cheat’s beef and bacon lasagne between plates and serve tomato salad on the side.
