Beef Mince Pies

Ingredients

Beef Mince Pies

  • 1 brown onion, finely diced or grated
  • 2 stalks celery, finely diced
  • 1 carrot, grated
  • 1 clove garlic, minced
  • 1 sheet flaky puff pastry
  • 1-2 tablespoons milk
  • 450g beef mince
  • 2 tablespoons flour
  • 2 tablespoons tomato paste
  • ½ cup red wine or beef stock
  • 1 cup beef stock
  • 3 tablespoons milk
  • 1½-2 teaspoons Worcestershire sauce
  • 1 teaspoon tomato sauce

Salad

  • 1 baby cos lettuce
  • ½ telegraph cucumber
  • 1 tomato
  • 2 teaspoons olive oil
  • 1-2 teaspoons vinegar (e.g. red wine, white wine)

To Serve

  • ¼ cup tomato sauce (optional)

Steps

  1. Preheat oven to 220°C. Line an oven tray with baking paper. Prepare your vegetables. Heat a drizzle of oil in a large fry-pan on medium heat and cook onion, celery, carrot and garlic for 5-6 minutes, until tender.
  2. While veggies cook, unroll pastry sheet and lay flat on the bench. Cut into 6 even-sized squares, place on prepared tray and brush lightly with milk. Bake for 10- 12 minutes, until puffed and golden. Set aside.
  3. Add beef to pan with veggies and cook for about 5 minutes, using a wooden spoon to break up the mince as it cooks, until browned. Add flour and tomato paste to pan and cook a further 1-2 minutes.
  4. Add red wine (if using) or both measures of stock, milk, Worcestershire sauce and tomato sauce to pan and cook for 5-7 minutes, stirring regularly to avoid sticking, until sauce thickens. Season to taste.
  5. While mince is cooking, prepare the salad. Tear lettuce leaves into smaller pieces, cut cucumber in half lengthways then thinly slice, cut tomato into 1cm wedges and add to a medium bowl. Drizzle with oil and vinegar and toss to combine. Season.
  6. To serve, spoon mince onto each plate and top with a pastry square. Serve salad on the side. Squeeze tomato sauce over pies (if using).
