Lamb Burgers

Leave off tomato relish and use tomato sauce for fussy eaters. Kids can build and tailor their own burgers however they like.


Ingredients

Lamb Burgers

  • 550g lamb mince
  • ¼ cup panko breadcrumbs
  • 1/2 carrot, grated
  • 1 tablespoon lamb spice mix
  • 1/2 tablespoon salt

Salad

  • 1 baby cos lettuce
  • 1 tomato
  • 1/2 carrot
  • 50g feta cheese
  • 1 avocado
  • ¼ cup mayonnaise

To Serve

  • 6 burger buns
  • 80g tomato relish
  • 1-2 tablespoons tomato sauce (optional)

Steps

  1. Preheat oven to 180°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to medium-high (if using). Place lamb, panko breadcrumbs, carrot, lamb spice mix, and salt into a bowl and mix well. Divide lamb mix into six even amounts (approximately 1/3 cup), roll into balls and then flatten into 1cm-thick patties. Set aside. 48
  2. Tear lettuce leaves into smaller pieces; thinly slice tomato; grate second measure of carrot; crumble feta and set aside on a platter. Cut avocado in half length ways and twist halves to separate. Remove stone using a spoon, scoop out flesh and place into a bowl. Mash using a fork and season to taste.
  3. Heat a drizzle of oil in a large fry-pan on medium-high heat and cook patties, in two batches, for 2 -3 minutes each side until golden and cooked through. Wipe out pan between batches and add another drizzle of oil as needed.
  4. While patties are cooking, slice buns in half horizontally and place cut-side-up on prepared tray. Warm in oven for 4-5 minutes until lightly toasted and warmed through.
  5. To serve, place everything in the middle of the table for everyone to help themselves. Place a patty onto the base of each bun and top with feta, a dollop of tomato relish or tomato sauce (for kids), lettuce, tomato, and carrot. Spread mayo and avocado on top half of bun. Serve remaining salad on the side.
