Teriyaki Pulled Beef Salad

Cook rice in advance and mix through salad to make a tasty rice salad. Store in fridge until ready to eat, making this super easy to whip up on the night.


Ingredients

Rice

  • 1½ cups Japanese brown rice
  • 2¼ cups water

Teriyaki Sauce

  • 1½ tablespoons GF soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon GF rice vinegar
  • ½ teaspoon finely grated ginger (optional)
  • 1 clove garlic, minced

Pulled Beef

  • 450g pulled beef
  • Pinch of chilli flakes (optional, adults)

Sesame Dressing

  • 2 tablespoons GF mayonnaise
  • 1 teaspoon sesame oil
  • 1 teaspoon GF soy sauce
  • ½ teaspoon honey
  • 1 teaspoon GF rice vinegar

Salad

  • 1 sweet Palermo capsicum
  • ¼ cabbage
  • 1 carrot
  • ½ cos lettuce

To Serve

  • 1 spring onion (optional, adults)
  • 35g chopped, roasted peanuts and sesame seeds

Steps

  1. Set aside all your ingredients. Combine rice, water and a pinch of salt in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during Cook rice in cooking.
  2. In a small bowl, whisk together all teriyaki sauce ingredients.
  3. Place pulled beef, chilli flakes (if using) and teriyaki sauce in a medium pot or pan on medium heat. Stir and cook for 3-5 minutes until sticky and liquid has evaporated. Use a fork to shred any larger pieces of meat. If mixture becomes too dry, add 1-2 tablespoons water. Cover to keep warm.
  4. Combine all sesame dressing ingredients in a large bowl.
  5. Prepare the salad. Thinly slice capsicum, thinly cabbage until you have about 2-3 cups worth; grate carrot; roughly chop lettuce. Place all in bowl with sesame dressing. Toss to combine and season to taste. Thinly slice spring onion for garnish (if using).
  6. To serve, spoon ¾ cup cooked rice per person onto each plate and top with teriyaki pulled beef and a handful of salad. Garnish with spring onion (if using), peanuts and sesame seeds.
