Beef Steak Fajita Rolls with Chipotle Corn

Cooking corn in the husk will give a great smoky flavour.


Ingredients

Chipotle Corn

  • 4 corn cobs (keep in husk)

Beef Steak Fajita Sandwiches

  • 700g beef sirloin steaks (at room temperature)
  • 2 tablespoons fajita spice mix
  • 1 punnet baby capsicums
  • 1 red onion
  • 12 ciabatta rolls

Chipotle Butter

  • 1 tablespoon chipotle sauce
  • 4-5 tablespoons softened butter

Chipotle Sour Cream

  • 125g sour cream
  • ½-1 tablespoon chipotle sauce

Steps

  1. Preheat BBQ grill to medium. Cook corn (in husks – do not peel) on BBQ hot plate for 25-30 minutes, turning every 5 minutes, until tender. While corn cooks, pat beef dry. Toss with fajita spice mix and a drizzle of oil and season. Slice capsicums and onion 1cm. Toss with a drizzle of oil and season. Set all aside to BBQ.
  2. Combine first measure of chipotle sauce and butter in a small bowl. Cut ciabatta rolls nearly in half horizontally, leaving a hinge. Reserve 2 tablespoons of chipotle butter for the corn and set aside. Spread remaining butter inside the rolls. Place three rolls together and wrap in foil, repeating for the rest.
  3. Combine sour cream and second measure of chipotle sauce in a small bowl and set aside.
  4. When corn has 10 minutes cook time remaining, cook beef on BBQ grill for about 3 minutes each side, for medium-rare (depending on thickness), or until cooked to your liking. Set aside to rest, covered, for 5 minutes.
  5. While beef rests, cook veggies on BBQ hot plate for about 5 minutes until tender. Heat ciabatta rolls in foil on BBQ grill for about 5 minutes, turning once or twice to prevent burning. Peel back husk from corn and spread with reserved chipotle butter. Thinly slice steak against the grain and add to veggies, along with any resting juices. Season to taste if needed.
  6. To serve, fill each roll with beef steak fajita filling and a dollop of chipotle sour cream. Serve chipotle corn on the side.
