Mash patty mixture as well as you can. The more you mash it, the better they will stick together.

Ingredients

Chunky Fries

  • 600g potatoes, cut into 1.5cm fries

Cheesy Falafel Patties

  • 2 cans chickpeas, rinsed and drained
  • 1½ cups grated cheese
  • 2 tablespoons flour
  • 1 tablespoon sweet chilli sauce
  • 2 tablespoons From My Kitchen Indian 5 Spice
  • 1 teaspoon salt
  • ¼ cup flour

5-Spice sour cream

  • 2 teaspoons From My Kitchen Indian 5 Spice
  • 125g sour cream
  • 2 tablespoons hot water

To Serve

  • 6 burger grain baps
  • 1 tomato
  • 2 carrots
  • ½ baby cabbage
  • 1 tablespoon mayonnaise
  • ½ tablespoon sweet chilli sauce

Steps

  1. Preheat oven to 220°C. Line two oven trays with baking paper. Preheat BBQ hot plate to medium (if using). Prepare ingredients. Toss fries on prepared tray with a drizzle of oil. Season and roast for about 25 minutes, until golden and crunchy.
  2. While fries cook, place all cheesy falafel burger ingredients (except second measure of flour) into a large bowl and mash really well (the more mashed, the better the patties will stick together). Divide mixture into 6 and use clean hands to form patties, about 1.5cm-thick.
  3. Heat a drizzle of oil in a large fry-pan on medium heat. Place flour onto a plate and season. Carefully coat each patty in flour then cook, in batches, for 2-3 minutes each side, until golden and cooked through. While patties cook, prepare the rest of the meal.
  4. Cut buns in half and set aside. Thinly slice tomato; grate carrots; thinly slice red cabbage. When chips have 5 minutes cook time remaining, place buns, closed, on second prepared tray. Place in oven (on rack below chips) for about 5 minutes to warm through.
  5. Toss carrots, cabbage, mayonnaise and sweet chilli sauce in a shallow bowl and season to taste. Combine second measure of Indian 5 spice, sour cream and hot water in a small bowl and season to taste.
  6. To serve, fill burgers with cheesy falafel patties, slaw, tomato and a drizzle of 5-spice sour cream. Serve chunky fries on the side.
