Pan-Fried Fish with Salsa Verde Kumara And Greens

Use BBQ to cook fish, if desired (as per recipe method). For fussier kids, keep kumara and mayo plain and serve extra salsa verde on the side for the adults.


Ingredients

Salsa Verde Kumara

  • 600g red kumara, diced 2-3cm
  • 40g salsa verde
  • ½ bag baby spinach

Greens

  • 1 broccoli
  • 200g green beans
  • 2 teaspoons butter (optional)

Salsa Verde Mayo

  • 40g salsa verde
  • 2 tablespoons GF mayonnaise

Pan-Fried Fish

  • 450g fish fillets
  • ¼ cup GF flour
  • ½ teaspoon salt

Steps

  1. Preheat oven to 220°C. Line an oven tray with baking paper. Bring a medium pot of salted water to the boil. Preheat BBQ hot plate to medium-high (if using). Prepare kumara. Toss kumara on prepared tray with a drizzle of oil. Season and roast for 20-25 minutes, until golden and tender. Turn once during cooking.
  2. While kumara is cooking, prepare greens. Cut broccoli into small florets and finely dice stalk. Set aside. In a small bowl, mix second measure of salsa verde and mayo together and set aside.
  3. When kumara has about 5 minutes cook time remaining, cook beans and broccoli in pot of boiling water for 2-3 minutes, until bright green and tender. Drain, return to pot, toss with butter (if using) and season. Cover to keep warm.
  4. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Pat fish dry and remove any remaining scales or bones. Place flour and salt on a plate and mix together. Coat fish in seasoned flour, shaking off any excess. Cook fish, in batches if needed, for 1-2 minutes each side, until just cooked through.
  5. Transfer cooked kumara to a medium bowl. Toss through salsa verde and spinach. Season to taste.
  6. To serve, divide salsa verde kumara and greens between plates and top with a piece of pan-fried fish. Dollop over salsa verde mayo.
