Turmeric Poached Fish with Rice and Chilli Floss

Just use a small spinkle of chilli floss, a little goes a long way.


Ingredients

Rice

  • ½ cup basmati rice
  • ¾ cup water

Turmeric Poached Fish

  • 150g fish fillet
  • 30g turmeric paste
  • 1 can coconut milk
  • ¼ cup chicken stock
  • ½ tablespoon fish sauce
  • ½ teaspoon sugar
  • 1 teaspoon soy sauce
  • Juice of ¼ lemon

Salad

  • ½ Lebanese cucumber
  • 2 radishes
  • ½ carrot
  • 1-2 tablespoons roughly chopped coriander
  • 1 teaspoon olive oil
  • 1 teaspoon rice wine vinegar

To Serve

  • Pinch of chilli floss

Steps

  1. Set aside all ingredients. Combine rice, water and a pinch of salt in a small pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.
  2. Heat a drizzle of oil in a pot (with a lid) on medium heat. Cook turmeric paste with 1 tablespoon of coconut milk for about 30 seconds, stirring, until fragrant. Add all coconut milk, stock, fish sauce, sugar and soy sauce and simmer for about 3 minutes.
  3. Pat fish dry, remove any remaining scales or bones, and cut into 3cm pieces. Add lemon juice and fish to pot, stir to cover fish in sauce, cover with a lid and turn off heat. Leave fish to steam for about 5 minutes, until just cooked through. Season to taste with extra fish sauce and soy sauce if needed.
  4. Thinly slice cucumber on an angle; cut radishes into matchsticks or thinly slice; peel carrot into ribbons; roughly chop coriander. Place all in a bowl, along with olive oil and vinegar, toss to combine and season.
  5. To serve, spoon ¾ cup cooked rice onto a plate and top with turmeric poached fish and sauce. Sprinkle over chilli floss and serve salad on the side.
