Halloumi Tacos with Mango Chutney and Sweetcorn Salsa

Alternatively, cook halloumi on BBQ hot plate and grill tortillas to avoid cooking indoors! Cook halloumi and tortillas for 30-60 seconds each side, until warmed and slightly charred. Cover with a tea towel on a plate while you cook remaining tortillas.


Ingredients

Sweetcorn Salsa

  • 1 corn cob, peeled
  • 1 tomato
  • ½ telegraph cucumber
  • 1 shallot
  • 1 baby cos lettuce
  • 2 tablespoons picked coriander leaves
  • Zest and juice of 1 lemon

Halloumi Tacos

  • 200g halloumi cheese
  • 1 teaspoon Mexican blend
  • 4-6 tortilla wraps

To Serve

  • 2-3 tablespoons mayonnaise
  • 60g veggie mango chutney
  • 1 tablespoon picked coriander leaves

Steps

  1. Bring a small pot of salted water to the boil. Preheat oven to 220°C. Preheat BBQ grill and hot plate to high (if using). Prepare ingredients. Cut corn cob in half and place in pot of boiling water. Turn off heat and cover with a tight-fitting lid. Leave to cook for about 10 minutes, until tender.
  2. Cut halloumi into 0.5cm strips then cut in half lengthways. Place on a plate with a drizzle of oil and coat in Mexican blend. Set aside to marinate.
  3. Dice tomato and cucumber 1cm; finely dice shallot; shred lettuce and roughly chop coriander. Add all to a bowl, along with lemon zest and juice and a drizzle of olive oil. When corn has finished cooking, remove from water and remove kernels. Add to bowl with veggies, toss and season.
  4. Wrap tortillas in foil and warm in oven for about 5 minutes, until heated.
  5. While tortillas warm, heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook halloumi for 1-2 minutes each side, until golden.
  6. To serve, smooth a little mayo onto each tortilla and top with sweetcorn salsa, halloumi and a dollop of mango chutney. Sprinkle over coriander leaves and serve any remaining sweetcorn salsa on the side.
