Tarragon Chicken with Green Bean Salad and Hollandaise Sauce

Alternatively, cook chicken on BBQ hot plate for about 3 minutes each side, until just cooked through. Set aside to rest for about 5 minutes before slicing thickly.
Ingredients
Green Bean Salad
- 800g baby potatoes, diced 3cm
- 200g green beans, sliced 1cm
- ¼ red onion
- 2 tomatoes
- 2 tablespoons mayonnaise
- Juice and zest of ½ lemon
Tarragon Chicken
- 600g chicken breasts
- 2 tablespoons Dijon mustard
- ½ teaspoon salt
- 2 tablespoons finely chopped tarragon
- ¾ cup panko breadcrumbs
To Serve
- 100g hollandaise sauce

Bring a large pot of salted water to the boil. Preheat BBQ hot plate to medium heat (if using). Prepare vegetables. Cook potatoes in pot of boiling water for about 15 minutes, until tender. Add beans for final 30 seconds of cook time. Drain well and place in a large bowl.

While potatoes cook, pat chicken dry and cut into steaks. To do this, place your hand flat on top of chicken breast and use a knife to slice through horizontally to make two thin steaks.

Place chicken in a bowl, along with mustard, salt and tarragon. Season with pepper and toss to coat. Add breadcrumbs to a shallow dish and add chicken to coat, shaking off excess.

Heat a drizzle of oil in a large (preferably non-stick) fry-pan on medium heat. Cook chicken for about 3 minutes each side, until just cooked through and golden. Set aside to rest for about 5 minutes before slicing thickly.

While chicken cooks, finely dice red onion and dice tomatoes 1cm. Toss in bowl with potatoes and beans. Add all remaining green bean salad ingredients, toss to combine and season to taste.

To serve, divide green bean salad between plates, top with slices of tarragon chicken and drizzle with hollandaise sauce.
