Chermoula Salmon with Puy Lentil Greek Salad

Alternately, cook salmon on BBQ grill or hot plate. Cook on medium-high heat for 3 minutes skin-side-down. Flip and cook for a further 2 minutes, for medium-rare, or until cooked to your liking.


Ingredients

Puy Lentil Greek Salad

  • 100g Puy lentils
  • ½ punnet cherry tomatoes, halved
  • ½ telegraph cucumber, diced 1cm
  • ½ bag rocket
  • 50g feta cheese, crumbled
  • Juice of 1 lemon
  • 1 tablespoon olive oil

Chermoula Salmon

  • 1 tablespoon olive oil
  • Pinch of chilli flakes (optional)
  • 1-2 teaspoons chermoula blend
  • 300g salmon fillet

To Serve

  • 100g chermoula mayonnaise

Steps

  1. Bring a small pot of water to the boil. Prepare ingredients. Cook lentils in pot of boiling water for about 25 minutes, until just tender but still slightly firm to the bite. Drain and transfer to a large bowl.
  2. While lentils cook, prepare salmon. Combine olive oil, chilli flakes (if using) and chermoula blend on a large, flat plate. Pat salmon dry, remove any pin bones and cut into 2-3 pieces. Coat well in chermoula mixture and season.
  3. When lentils have 8 minutes cook time remaining, heat a drizzle of oil in a medium fry-pan on mediumhigh heat. Cook salmon, skin-side-down, for about 3 minutes, until skin is crispy. Flip and cook for a further 2 minutes for medium-rare, or until cooked to your liking. Set aside to rest for 2-3 minutes.
  4. Halve cherry tomatoes and dice cucumber 1cm.
  5. Add to a bowl along with cooked lentils and remaining Puy lentil Greek salad ingredients. Toss well and season.To serve, spoon chermoula mayonnaise onto plates and spread out off centre. Top with Puy lentil Greek salad and chermoula salmon flesh-side-up.
