Makrut Lime Dressed Beef with Thai Crunchy Noodle Salad

Ingredients

Beef and Thai Crunchy Noodle Salad

  • 300g pumpkin, peeled and diced 1cm
  • 300g beef sirloin steak (at room temperature)
  • ½ punnet cherry tomatoes
  • ½ telegraph cucumber
  • ½ bag baby spinach
  • 2 tablespoons chopped mint leaves (reserve a few leaves for garnish)
  • 2 tablespoons chopped coriander leaves (reserve a few leaves for garnish)
  • 1 packet crispy noodles

Makrut Lime Dressing

  • 1 makrut lime leaf, central stem removed and very finely chopped
  • 2 teaspoons finely grated ginger
  • 1 clove garlic, minced
  • Juice of 1 lemon
  • 2 teaspoons fish sauce
  • 1½ tablespoons sweet chilli sauce
  • 1½ tablespoons extra-virgin olive oil
  • Pinch of chilli flakes (optional)

Steps

  1. Preheat oven to 220°C. Line an oven tray with baking paper. Preheat BBQ grill to high (if using). Prepare ingredients. Toss pumpkin on prepared tray with a drizzle of olive oil and season. Roast for about 15 minutes, until tender. Allow to cool slightly.
  2. In a small bowl, mix all makrut lime dressing ingredients together and set aside.
  3. Pat beef dry with a paper towel and season. Heat a drizzle of oil in a medium fry-pan on high heat. Cook beef for about 2 minutes each side for medium-rare (depending on thickness), or until cooked to your liking.
  4. Set beef aside on a plate, covered, to rest for 5–10 minutes before slicing thinly against the grain.
  5. While beef is resting, prepare the salad. Cut cherry tomatoes in half and cut cucumber in half lengthways and thinly slice. Place in a large bowl along with spinach, herbs, crispy noodles and cooked pumpkin. Just before serving, toss with half the dressing.
  6. To serve, divide Thai crunchy noodle salad between plates and top with slices of beef. Drizzle over remaining dressing and garnish with reserved herbs.
