Harissa Chicken Kofta with Saffron Yoghurt and Couscous

Dampen your hands slightly to make it easier to roll your kofta. This will prevent the mixture from sticking to your hands so much. Alternatively, cook kofta on BBQ hot plate for about 8 minutes, turning often, until golden and cooked through.


Ingredients

Harissa Chicken Kofta

  • 300g chicken bacon grind
  • 1 courgette, grated
  • 3 tablespoons panko
  • ¼ teaspoon salt
  • 1 tablespoon harissa spice

Couscous

  • ¾ cup water
  • ¼ teaspoon salt
  • Zest and juice of ½ lemon
  • 1 teaspoon olive oil
  • 10g barberries
  • ½ cup wholemeal couscous
  • 75g baby spinach, thinly sliced
  • ½ telegraph cucumber, peeled into ribbons

Saffron Yoghurt

  • 120g yoghurt
  • ½ pottle saffron
  • ¼ teaspoon honey (optional)

To Serve

  • 2 tablespoons picked mint leaves

Steps

  1. Prepare vegetables. Preheat BBQ hot plate to medium (if using). Combine all harissa chicken kofta ingredients in a large bowl. Using a ¼ cup measure, shape kofta mixture into cakes and set aside.
  2. Heat a drizzle of oil in a large fry-pan on low-medium heat. Cook kofta for about 8 minutes, until golden and cooked through. Turn halfway during cooking. Set aside, covered, to rest for 3-4 minutes.
  3. While kofta cook, prepare couscous. Bring water, salt, lemon zest and juice, olive oil and barberries to a simmer in a small pot. As soon as it simmers, remove from heat and stir through couscous. Cover with a tight-fitting lid and set aside to steam for 5 minutes. Fluff up grains with a fork.
  4. While kofta rest, combine all saffron yoghurt ingredients in a small bowl and set aside.
  5. When couscous has finished cooking, transfer to a large bowl and fold through spinach, cucumber ribbons and a drizzle of olive oil. Season and set aside.
  6. To serve, divide saffron yoghurt between plates and smooth out. Top with couscous and harissa chicken kofta, and garnish with mint.
