Chermoula Beef Pave Steak with Super Seed Vegetables and Feta

Resting juices help add moisture to the dish, and hold plenty of flavour too. Great to use in place of a dressing if you like things saucier.


Ingredients

SUPER SEED VEGETABLES

  • ½ broccoli
  • 100g pumpkin
  • 1/8-¼ red onion
  • ½ teaspoon oil
  • 2 teaspoons super seed mix
  • ½ pottle chermoula dressing
  • ½ tomato

CHERMOULA BEEF STEAK

  • 140g lean beef pave steak (at room temperature)
  • ¾ teaspoon chermoula spice
  • Spray oil

CUCUMBER YOGHURT

  • ¼ Lebanese cucumber
  • ½ pottle chermoula dressing
  • 2 tablespoons yoghurt

TO SERVE

  • ¼ Lebanese cucumber
  • 1 tablespoon crumbled feta cheese

Steps

  1. Preheat oven to 220ºC. Line an oven tray with baking paper. Preheat BBQ grill or hot plate to medium-high (if using).
  2. Cut broccoli into small florets and dice pumpkin and red onion 2cm. Toss with oil on prepared tray, season and bake for about 18 minutes.
  3. Remove from oven, sprinkle over super seed mix and continue to bake for 3-4 minutes, until seeds are lightly golden and vegetables are tender.
  4. Heat a medium, dry fry-pan on medium-high heat. Pat beef dry, rub with chermoula spice mix and season.
  5. Spray pan with oil and cook beef for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, cook on BBQ. Set aside to rest, covered, for 3-4 minutes.
  6. Finely dice both measures of cucumber (set aside half to serve). Combine all chermoula yoghurt ingredients in a small bowl, mix together and season to taste. Set aside.
  7. Once vegetables are cooked, add to medium bowl, along with chermoula dressing and tomato. Toss to combine and season to taste.
  8. Once beef has rested, slice against the grain, reserving any resting juices.
  9. To serve, place super seed vegetables onto a plate. Top with chermoula beef and spoon over resting juices (if desired). Dollop over cucumber yoghurt and sprinkle over feta and remaining cucumber.
