Veggie Bean Nachos with Chipotle Sour Cream

If the adults are keen to spice things, add some chilli flakes to your own plate of nachos.


Ingredients

Sauce

  • 1 brown onion
  • 1 carrot
  • 1 courgette
  • 1 cup frozen corn
  • 1½ Tbsp nacho spice mix
  • 1 can mild chilli beans
  • 1 can chopped tomatoes

Chipotle Sour Cream

  • 125g sour cream
  • 1-2 tsp chipotle sauce (optional, adults)

To Serve

  • 2 bags corn chips
  • ½ cup grated Parmesan cheese
  • 3 Tbsp parsley (optional, adults)

Steps

  1. Finely dice onion and grate carrot and courgette. Heat a drizzle of oil in a large fry-pan on medium heat. Cook onion for 3-4 minutes, until softened.
  2. Add carrot, courgette and corn and cook a further 4-5 minutes, until vegetables are soft. Add a splash of water if vegetables start to stick.
  3. Stir in nacho spice mix, chilli beans and canned tomatoes and simmer for about 5 minutes, until sauce has thickened slightly. Season to taste.
  4. While nacho mixture is cooking, mix sour cream and chipotle sauce (if using) together in a small bowl. Grate cheese and chop parsley (if using).
  5. To serve, place a handful of corn chips into each bowl and spoon over bean and vegetable sauce. Top with a spoonful of chipotle sour cream and a sprinkle of cheese. Garnish with parsley (if using).
