Tandoori Chicken and Feta Pizza with Yoghurt Drizzle

Although mild, try adding tandoori paste a little at a time to suit your taste buds.


Ingredients

Pizza

  • ¼ red onion *
  • 1 capsicum
  • 200g chicken mince
  • 1 Tbsp tandoori paste (depending on heat preference)
  • ¼ tsp salt
  • 35g tomato paste
  • 1 Tbsp sweet chilli sauce
  • 2 tsp olive oil
  • 1 pizza base
  • 50g feta cheese

Salad

  • 1 Tbsp coriander leaves
  • 1 tsp Dijon mustard
  • 2 tsp red wine vinegar
  • 1 Tbsp olive oil
  • 1 baby cos lettuce
  • 1 Lebanese cucumber
  • ½ courgette

Yoghurt Drizzle

  • 1 Tbsp coriander leaves
  • ¼ cup yoghurt
  • ¼ tsp honey

Steps

  1. Preheat oven to 220°C. Preheat an oven tray (or pizza stone if you have one). Thinly slice onion and capsicum, and roughly chop coriander.
  2. Heat a drizzle of oil in a large fry-pan on high heat. Cook chicken mince for about 2-3 minutes, breaking up with a wooden spoon, until cooked through. Add tandoori paste and salt and cook a further 1-2 minutes, until fragrant. Set aside.
  3. While chicken cooks, mix tomato paste, sweet chilli sauce and olive oil in a shallow bowl. Lay a sheet of baking paper on the bench and place pizza base on top. Spread tomato mixture evenly over base then sprinkle over feta cheese. Top with cooked chicken mince, red onion and capsicum. Season.
  4. Carefully lift baking paper with pizza on top and place on preheated tray (or stone) then carefully slide baking paper away (use a fish slice to help with this). Cook until the base is crisp and golden around the edges, 12-14 minutes.
  5. Whisk together first measure of coriander, mustard, vinegar and oil in a large bowl. Roughly chop lettuce; thinly slice cucumber; peel courgette into ribbons. Add veggies to bowl with dressing, toss to combine and season to taste. Combine all yoghurt drizzle ingredients together in a small bowl.
  6. To serve, cut tandoori chicken and feta pizzas into 6-8 pieces and top with yoghurt drizzle. Divide slices between plates and serve salad on the side.
