Herbed Beef Steaks with Garlic Crushed Kumara

Marinate your beef overnight for even tastier, more tender result. If you don’t have an oven tray with a lip, don’t panic! Just be careful the melted butter doesn’t run off the sides.


Ingredients

Kumara

  • 600g red kumara
  • 3 cloves minced garlic
  • 1 Tbsp melted butter

Beef Steaks

  • 550g beef rump steaks (at room temperature)
  • 2 tsps beef spice mix (optional, adults)

Veggies

  • 1 bunch baby carrots
  • 1 punnet cherry tomatoes
  • ½ bag baby spinach
  • 2-3 tsps GF balsamic vinegar (optional, adults)

Steps

  1. Preheat oven to 220°C. Line two oven trays (one with a lip) with baking paper. Dice kumara 2cm and toss with a drizzle of olive oil on prepared tray (with a lip). Season and roast for 15 minutes. Remove from oven, toss through garlic and butter and roast a further 10 minutes, until tender.
  2. While kumara is cooking, pat beef dry, drizzle with oil and coat in beef spice mix, (if using). Set aside to marinate. Trim stringy and green ends off carrots (leave a little of the green end intact) and slice in half lengthways.
  3. Toss baby carrots and tomatoes with a drizzle of olive oil on second prepared tray and season. Roast for 12-15 minutes, until carrots are tender and tomatoes have blistered.
  4. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Season beef and cook for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered, to rest for about 3 minutes before slicing thickly against the grain.
  5. When kumara has finished cooking, lightly crush using a fork or masher. Toss spinach on tray with roasted veggies and balsamic vinegar (if using) just before serving. Season to taste.
  6. To serve, divide garlic crushed kumara between plates and top with slices of herbed beef steaks. Serve veggies on the side.
