Sesame Miso Glazed Pork with Broccolini

Ideally, use rice wine or white wine vinegar in your rice and cucumber salsa.


Ingredients

Rice

  • 200g jasmine rice
  • 1½ cups water
  • 2 tsp vinegar

Salsa

  • 1 Lebanese cucumber
  • 2-3 spring onions
  • 2-3 spring onions
  • ½ tsp soy sauce

Pork and Broccoli

  • 300g pork medallions
  • 40g sesame seed mix
  • ½ broccoli
  • ¼ cup water
  • 3 tsp miso drizzle

To Serve

  • 2-3 tsp miso drizzle
  • 3 Tbsp mint
  • 1g shredded nori

Steps

  1. Combine rice, water and a pinch of salt in a small pot on medium heat and bring to a boil. As soon as it boils, cover with a tight-fitting lid and reduce to low heat to cook for 12 minutes. Turn off heat and leave to steam, still covered for 8 minutes. Do not lift lid during cooking.
  2. Finely dice cucumber and thinly slice spring onions. Toss both in a medium bowl, along with vinegar and soy sauce. Season to taste and set aside. Cut broccoli into small florets.
  3. Pat pork dry and season. Pour sesame seed mix onto a plate. Coat pork in sesame seeds, pressing down firmly to adhere. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook pork for 2-3 minutes each side (depending on thickness), until just cooked through. Set aside, covered, to rest for 3-4 minutes. Reserve pan.
  4. Wipe pan clean and return to medium-high heat with a little more oil. Cook broccoli for 1 minute. Add water and miso drizzle and cook a further 1-2 minutes, until broccoli is bright green and tender.
  5. Thinly slice pork against the grain. Fluff up rice with a fork and stir through vinegar.
  6. To serve, spoon ¾ cup cooked jasmine rice onto plates and serve broccoli on the side. Top with slices of pork and salsa. Drizzle over miso drizzle and any resting juices from the pork. Sprinkle with mint leaves and shredded nori.
